In recent times, veganism has become a mainstream that has shaken the world to its core. I can proudly say that I am one of those people who (although at the beginning very skeptical) quickly became obsessed with the plant-based diet and developed a hobby of creating super easy and scrumptious vegan recipes.

Whether you want to transition to the vegan lifestyle or just want to spice up your diet, here are three mouthwatering completely vegan dishes that will tease your taste buds and leave you wanting for more. Here are three vegan recipes you should try mostly if you’re new to the vegan lifestyle

Blueberry and banana pancakes 

Pancakes are ALWAYS a good idea. Whether you prefer to eat them for breakfast or dessert, they will never disappoint and I am sure they are a favorite in every household. Why don’t you try to take it up a notch and prepare slightly modified, but much healthier pancakes? 

Ingredients  
  • Non-dairy milk of choice 
  • Sugar 
  • Flour 
  • Oil 
  • Baking powder 
  • Blueberries  
  • Ripe bananas 
Instructions

Start by mashing the bananas with a fork and combine them with the milk and oil. Then add the flour, sugar and baking powder and whisk until blended. As a result, the batter should become quite thick. Afterwards, add the blueberries and carefully stir themPreheat the stove and put a couple of drops of oil in preferably non-stick pan and spread it evenly across the pan. Let the pancake cook for 1-2 minutes until golden brown and flip it once you notice bubbles coming out of the pancake.  

Coconut lentil curry 

Everyone that has at least documented themselves about the vegan lifestyle, knows that lentils are a superfood with high levels of protein and fiber. However, they may sometimes be quite bland tasting, and unappealing for many people. But combining this dish with some coconut milk and curry powder will take it to a whole different level.

 Ingredients
  • Onion
  • Garlic
  • Vegetables of choice (such as spinach, potato, broccoli, zucchini, etc.)
  • Lentils
  • Oil
  • Tomato paste
  • Turmeric
  • Ginger
  • Cumin
  • Curry powder
  • Salt
  • Pepper  
  • Coconut milk
Instructions 

Firstly, chop the onion and garlic and fry them on low. Secondly, add the spices and keep frying them together for 2-3 minutes. Thirdly, pour the tomato paste and the lentils and stir until blended. Immediately after that add in the veggies and pour the coconut milk. Finally, bring the curry to a boil, then reduce the heat and let it simmer until the lentils are ready and all the vegetables and nice and tender.  

Banana bread 

I present to you the type of bread you will devour within minutes. This is actually the recipe that got me really passionate about the vegan lifestyle. Not only it is cruelty-free, but is super healthy for your gut since it is full of fiber, so you don’t have to feel bad about eating too many carbs!

Ingredients
  • Ripe bananas 
  • Flour 
  • Sugar 
  • Oil 
  • Baking powder 
  • Cinnamon 
  • Vanilla extract (optional) 
Instructions  

Mash the bananas and mix them with the flour and oil. Furthermore, add in the dry ingredients and mix again until combined.  In addition, for richer flavor, you can add, a couple of drops of vanilla extract. In the meantime, preheat your oven to 160 or 180 degrees Celsius. Spread oil in the baking pan and pour in the mixture. Bake for 20-30 minutes. Let the bread cool before serving. 

Anyway, you don’t have to pursue the vegan lifestyle to be able to try out these recipes and give a shot to vegan food. Nevertheless, I believe that you should definitely make an effort and introduce some versatility into your diet and what better way to do that other than by cooking some awesome vegan dishes?
