Everyone loves cake. It’s the most common dessert out there, and there are thousands of types of it. Knowing how to bake a basic cake is, in my opinion, one of the most important cooking skills a person should have, which is why I thought I should share the recipe below. It’s an easy, foolproof, and highly customizable sponge cake recipe that you can modify however you like: with fruit, chocolate, coffee… you can even make it into cupcakes. Here, I’m giving you the basic recipe for the simplest cake you’ll ever make:

Ingredients:
- 5 eggs
- 200g of flour
- 200g of sugar
- 35 ml of neutral flavored cooking oil (like sunflower seed oil)
- A pinch of salt
- A packet/ 8g of baking soda
Making the cake:
Separate the eggs, placing the whites in a large bowl and the yolks in a smaller one. Using a stand mixer or a handheld mixer, whisk you egg whites until they form stiff peaks, gradually adding in the sugar as you do so, until you’re left with no sugar and shiny, stiff egg whites with the consistency of meringue.
Add the oil to the egg yolks and mix them together gently, until they form a homogenous mixture. In a separate bowl, combine your dry ingredients.
Add your dry ingredients and the egg yolk mixture to the egg whites and carefully fold everything together, maintaining as much air into the batter as possible. When your batter is smooth and all of the dry ingredients are fully incorporated, pour it into a tray lined with parchment paper and bake it in a preheated oven at medium temperature for about 20 minutes, or until a toothpick inserted into the cake comes out without any crumbs sticking to it.
