I prefer to label myself as one of the biggest oatmeal lovers. Many like eating this dish during colder weather. However, I devour it in both freezing winters and stifling hot summers. You would think that I would eventually get bored by it. And you would be right. It does get dull eating the same thing over and over again. Nevertheless, you only need a tiny bit of creativity that will make you see your favorite dish in a completely new light. Say goodbye to the old-fashioned oatmeal and try out the following evolved oatmeal recipes.  

Sweet potato oatmeal  

Ingredients  

  • 2 cups of oats  
  • 3 cups of plant-based milk (regular milk or water works as well)  
  • 1 mashed sweet potato  
  • 1 tablespoon of cinnamon  
  • 1 tablespoon of baking powder 
  • 3 tablespoons of honey, maple syrup, brown sugar, or any other kind of sweetener  
  • ½ cup of diced almonds  
  • a pinch of salt  

Cooking instructions    

The sweet potato can be either boiled or baked. Once it’s done, mash it and start prepping the oatmeal mixture. You need to combine the dry ingredients first: oatmeal, cinnamon, baking powder, and salt. Then slowly pour in the milk or water and sweet potato and carefully mix everything. In the end, add your sweetener. Put the mixture into a baking dish previously lined with parchment paper in order to avoid sticking to the pan. And finally, top it with some diced almonds. Bake at around 300 – 350 degrees Celsius no longer than 15 minutes.  

Carrot oatmeal   

Ingredients  

  • 2 cups of oats  
  • 2 cups of milk or water 
  • 4 carrots  
  • 1 tablespoon of cinnamon  
  • 2 tablespoons of honey (or another sweetener of preference)  
  • ½ cup of cranberries  
  • ½ cup of diced hazelnuts   
  • a pinch of salt  

Cooking instructions  

Before preparing the oatmeal, boil the carrots and grate them as thinly or thickly as you wish. Prepare your oats the usual way, by bringing to a boil your liquid of preference (milk or water). Add in the oats and a grain of salt and simmer them until you get a thicker consistency. After a couple of minutes, add in the cinnamon, cranberries, hazelnuts, and sweetener. Stir the oats for a minute or so before taking them off the heat.  

Zucchini oatmeal  

Ingredients  

  • 2 cups of oats  
  • 2 ½ cups of milk (either plant milk or regular; wouldn’t recommend water for this recipe)  
  • 2 zucchinis  
  • 1 tablespoon of flax seeds  
  • 1 tablespoon of chia seeds
  • 1 tablespoon of baking powder  
  • 2 tablespoons of sweetener of choice  
  • 1 cup of cashews (or other nuts of preference)  
  • a pinch of salt  

Cooking instructions  

Begin again by combining the dry ingredients: oats, flax seeds, chia seeds, baking powder, cashews, and salt. To that, pour in the milk and sweetener. Afterward, grate the zucchini and before adding it to the mixture, drain the water of the zucchini. Don’t forget to put again some parchment paper in the pan. Bake the oatmeal at 300 degrees Celsius for no more than 30 minutes.
