Go-to meals when laziness and tiredness get the best of you (Part 1)


After a long and exhausting day, cooking is the last thing that crosses our minds. But if we want to keep up with our health, we need to make an effort and prepare a healthy and nourishing meal even when we feel like laziness has possessed every inch of our bodies. Let me make your life easier when you come across these kinds of situations. Here you have three quick, simple, delightful meals that will save you both time and energy.  

Pot roast veggies  


There is nothing easier than throwing some veggies in the oven, sprinkling them with your favorite condiments, and calling it lunch. My forever staples are regular potatoes, sweet potatoes, zucchini, broccoli, carrots, and mushrooms. The more the merrier! I prefer to bathe them in some extra virgin olive oil (sunflower oil will do the trick as well) and cover them in salt, pepper, curcuma powder, oregano, and dried basil.

You can experiment with the seasoning and make the dish as salty or spicy as you wish. The quantity is all up to you. I’d recommend you’d crop extra veggies so there will be plenty of leftovers for the next day. I like to serve this meal with a side of tzatziki sauce. The spiciness of the vegetables and the garlicky flavor from the sauce make a perfect combination that will hypnotize your taste buds.  



Do you happen to have stale bread laying in the kitchen? Don’t throw it away! Make a meal out of it. Feel the taste of Italy by preparing some bruschetta. Revive the bread by putting on it some olive oil and toasting it on medium heat. Dice up a couple of tomatoes in small cubes, season them with salt, pepper, and balsamic vinegar and top them off with some fresh basil. Pour the mixture over the bread and voila! Dinner/lunch is served. This meal is so simple yet so incredibly fresh, delicious, and full of flavor. After you’ve tried it, you’ll want to eat bruschetta every single day.  

Baked salmon   


As a person who hates cooking fish, I never dared to experiment in the kitchen with any kind of fish. But when I came across salmon, I felt like possibilities were limitless. Not only it is not messy, but salmon can be prepared in a matter of minutes, it can be combined with various side dishes and make a wonderful meal. I like simplicity, so I prefer to prepare my salmon by seasoning it with nothing else but salt and pepper and put it in the oven for 15 minutes. I serve it with mashed potatoes or any other vegetables.
