3 Healthy Cookies Recipes That I Love

Trying to eat healthy and loving cookies at the same time might be hard. You try to choose the salad but almost always fail and eat ten cookies instead. Well, that happens to me too, and I can’t change myself, but I learned how to make cookies that will not make me feel bad after eating them.
These are 3 of my favorite healthy cookies recipes:

1. Cookies with Peanut Butter

Ingredients:
1 tablespoon of peanut butter
2 eggs
3 tablespoons coconut flour
¼ teaspoon baking soda
¼ teaspoon salt
½ teaspoon vanilla extract
1 tablespoon (or more) coconut sugar
as many chocolate chips as you want
Directions:
Basically, you’re supposed to mix the peanut butter, the eggs and the vanilla extract in a bowl, then the coconut flour, baking soda, salt and coconut sugar in another. In the end, mix them slowly until well combined. In the end, add the chocolate chips in too. With a spoon, portion your cookie dough and put it on your cooking tray and flatten the tops. The last step is to put them in the oven and wait for 6-7 minutes for them to bake at 325 degrees Fahrenheit until they’re ready.

2. Chocolate Chip Cookies

Ingredients:
75 g white flour
75g almond flour
¼ teaspoon baking soda
¼ teaspoon salt
1 tablespoon (or more) coconut sugar
2 tablespoons coconut oil
1 large egg
1 teaspoon vanilla extract
as many chocolate chips as you want
Directions:
Just as with the first one, add all the dry ingredients to a bowl and mix them together. Then, in another bowl, mix the coconut oil , sugar, egg and vanilla extract too. Now mix everything until well combined, then add the chocolate chips and mix them in too. Let the cookie dough aside for 10 minutes, then portion with a spoon and put it on the cooking tray. Flatten the tops and put them in the oven. After that, you just have to wait more 8 to 10 minutes for them to bake at 325 degrees Fahrenheit until they’re ready.

3. ‘Carrot Cake’ Cookies

Ingredients:
100g instant oats
90g almond flour
1 teaspoon baking powder
¼ teaspoon salt
2 teaspoons cinnamon
2 tablespoons coconut oil
1 large egg
1 teaspoon vanilla extract
120 ml maple syrup
70g grated carrots
Directions:
Add the oats, flour, baking powder, salt and cinnamon to a bowl and mix. In another bowl, add the coconut oil, egg, maple syrup and vanilla extract. Then, mix them together until well combined. After that, add the carrots and mix them in too. Set aside for at least 30 minutes, then, with a spoon, portion the cookie dough and add put it on the cooking tray. Flatten the tops and put them in the oven. In the end, wait for 12 to 15 minutes for them to bake at 325 degrees Fahrenheit until they’re ready.
